Chocolate Date Bites

If you’re looking for a sweet treat, these delicious healthy bitesize snacks will delight. So easy and versatile, you can mix and match whatever flavours take your fancy.                               

Serves: 16 portions                           Prep time:  15 mins                              Chill time: 30 mins       

Ingredients 

200g dates 

1 tablespoon coconut oil 

100g ground almonds 

½ teaspoon ground cinnamon  

3 tablespoons cocoa powder or cacao 

4 tablespoons desiccated coconut 

1 tablespoon peanut butter 


Method 

 1.  Deseed the dates. If using dried dates instead of fresh, soak them in warm water for 15
minutes then drain. Add to a food processor and pulse until they break up into pieces. 

2.  Add the ground almonds, cocoa powder, peanut butter and coconut oil.
Mix until fully combined and you have a crumbly texture. 

3. Take a tablespoon of the mixture and roll into a ball. Carry on until the mixture is finished. 

4. Mix the cinnamon and coconut on a plate and coat the balls in this mixture.  

5. Chill the balls in the fridge for about 30 minutes until firm.   

 

Top tips!  

* Use 100g raisins and 100g apricots instead of dates. 

* Substitute ground almonds with oats. 

* Any nut butter will do! Or if avoiding nuts, try tahini. 

* Add ginger, chilli, cardamom or tumeric to spice things up or citrus zest, orange/lemon oil
for  a refreshing zing. Coat the balls with chia or sesame seeds.  Be adventurous with
your flavours! 

* If feeling decadent, melt some dark chocolate, coat the balls and leave to cool. 

* Will keep in an airtight container for about 5 days.
